1. Organic Vegetable Stir-Fry

Ingredients:

1 cup broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup snap peas
1 carrot, thinly sliced
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon olive oil or sesame oil
1 teaspoon honey or maple syrup
Cooked brown rice or quinoa

Instructions:

Heat oil in a large skillet or wok over medium-high heat.
Add garlic and ginger, sauté for 1 minute until fragrant.
Add broccoli, bell peppers, snap peas, and carrot. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.
Mix soy sauce and honey/maple syrup in a small bowl, then pour over the vegetables.
Stir well and cook for another 2 minutes.
Serve over cooked brown rice or quinoa.
 

2. Organic Avocado and Chickpea Salad

Ingredients:

1 can organic chickpeas, drained and rinsed
1 organic avocado, diced
1 organic cucumber, diced
1 cup organic cherry tomatoes, halved
1/4 cup red onion, finely chopped
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Fresh parsley or cilantro, chopped (optional)

Instructions:

In a large bowl, combine chickpeas, avocado, cucumber, cherry tomatoes, and red onion.
Drizzle with olive oil and lemon juice.
Season with salt and pepper.
Toss gently to combine.
Garnish with fresh parsley or cilantro if desired.
 

3. Organic Smoothie Bowl

Ingredients:

1 cup organic frozen berries (strawberries, blueberries, raspberries)
1 organic banana
1/2 cup organic spinach
1/2 cup organic almond milk or other plant-based milk
1 tablespoon organic chia seeds
Toppings: fresh berries, sliced banana, granola, coconut flakes, nuts, etc.
Instructions:

1/4 cup organic Kalamata olives, pitted and sliced

Fresh basil or mint leaves, chopped (optional)
Instructions:

In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, feta cheese, and olives.
In a small bowl, whisk together lemon juice and olive oil.
Pour the dressing over the salad and toss to combine.
Season with salt and pepper.
Garnish with fresh basil or mint if desired.
 

5. Organic Roasted Vegetables

Ingredients:

1 organic zucchini, sliced
1 organic yellow squash, sliced
1 organic bell pepper, sliced
1 organic red onion, sliced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Instructions:

Preheat oven to 400°F (200°C).
In a large bowl, toss vegetables with olive oil, oregano, thyme, salt, and pepper.
